Oven Roasted Carrots
- 2 lb. baby carrots
- 1 red onion, halved and sliced
- 1/4 cup olive oil
- 3 to 4 cloves garlic, minced
- 1 tsp. oregano
- 1 tsp. sweet basil
- 1 tsp. parsley
- Combine olive oil and herbs.
- Place carrots in a mixing bowl and toss with the herbed oil.
- Put all in roasting pan and roast at 450F for 20-25 minutes or until browned.
- Serve immediately.
- Enjoy.
