BLT & Sweet Corn Pizza
- 6 slices Bacon
- 3 ears Sweet Corn, Grilled
- 1 whole Favorite Pizza Dough Or Pre-made Crust
- 2 Tablespoons Olive Oil
- 1- 1/2 cup Mozzarella, Sliced Or Shredded
- 1 whole Medium Tomato, Sliced Thin
- 1 cup Romaine Lettuce, Chopped
- Fry or bake your bacon over medium heat until just crisp.
- Remove husks from corn and grill them over medium heat until lightly charred on all sides.
- Let cool and then slice the corn off of the cob.
- Prepare your crust, making it into two small-sized pizzas.
- Brush one side with olive oil and place that side on a hot grill.
- Cook until the bottom is slightly crisp and pizza is stiff and easy to flip over with tongs.
- Brush the top side with oil and then flip it.
- Immediately layer on the cheese and top that with the bacon slices that have been torn in half or thirds, tomato slices and grilled corn kernels.
- Close the grill lid and let the pizzas cook until bottom crust is done and cheese is melted.
- Remove pizza from heat and top with chopped romaine lettuce and enjoy!
