Orange Cream-Frosted Brownies
- 1 (19 7/8 ounce) package brownie mix
- 12 cup vegetable oil
- 14 cup frozen thawed orange juice concentrate
- 2 large eggs
- 1 (8 ounce) package cream cheese, softened
- 3 cups powdered sugar
- 2 tablespoons frozen orange juice concentrate, thawed
- 1 teaspoon orange zest
- 1 -2 drop yellow food coloring
- 1 -2 drop red food coloring
- 12 cup semi-sweet chocolate chips
- 1 tablespoon shortening
- Preheat oven to 350.
- Position oven rack in the lower third of the oven.
- Spray the bottom only of a 13 x 9 inch baking pan with nonstick cooking spray.
- In a bowl, mix the brownie mix, oil, orange juice concentrate and eggs with a wooden spoon until just blended and all dry ingredients are moistened.
- Spread batter into prepared pan.
- Bake 28-30 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean (do not overbake).
- Transfer to wire rack and cool completely.
- Make frosting: in a small bowl mix the cream cheese, powdered sugar, orange juice concentrate, orange zest, and food colorings until smooth and spreadable; spread over cooled brownies.
- Place chocolate chips and shortening in a small saucepan set over low heat; stir until melted and smooth.
- Drizzle over brownies.
- Refrigerate at least 1 hour, until chocolate is set.
- Cut into squares; store in refrigerator.
