Mont-Saint-Michel Style Fluffy Omelet
- 3 Eggs
- 2 tbsp Heavy cream (or milk)
- 1 tsp Sugar
- 1 dash Salt and pepper
- 1 dash Butter
- 1 Maple syrup
- 1 Sugar
- 1 Cinnamon
- Mix the egg yolk, heavy cream (or milk), sugar, salt and pepper.
- This is how Step 1 looks like when mixed.
- Whip the egg whites with an electric mixer.
- Whip until the mixture forms a ribbon.
- Add 1/3 of the egg yolk mixture to the egg white.
- Gently combine the mixture of Step 5 to the rest of the egg whites.
- Heat the frying pan over medium heat and melt the butter.
- Pour in the egg mixture and smooth out the surface evenly.
- Turn down the heat to low and cook for 2 minutes.
- When the edges are crispy, it's done.
- Turn off the heat and cover with a lid for 5 minutes.
- Fold it in half and transfer to a plate.
- If you like, top with extras like the ingredients.
- You can substitute honey for maple syrup too!
