Mont-Saint-Michel Style Fluffy Omelet

  1. Mix the egg yolk, heavy cream (or milk), sugar, salt and pepper.
  2. This is how Step 1 looks like when mixed.
  3. Whip the egg whites with an electric mixer.
  4. Whip until the mixture forms a ribbon.
  5. Add 1/3 of the egg yolk mixture to the egg white.
  6. Gently combine the mixture of Step 5 to the rest of the egg whites.
  7. Heat the frying pan over medium heat and melt the butter.
  8. Pour in the egg mixture and smooth out the surface evenly.
  9. Turn down the heat to low and cook for 2 minutes.
  10. When the edges are crispy, it's done.
  11. Turn off the heat and cover with a lid for 5 minutes.
  12. Fold it in half and transfer to a plate.
  13. If you like, top with extras like the ingredients.
  14. You can substitute honey for maple syrup too!
