Seafood Margiotta With Ziti Recipe
- 2 cloves garlic
- 2 tbsp. extra virgin olive oil
- 2 tbsp. butter
- 1/2 c. minced onion
- 8 Italian tomatoes, minced
- 2 tbsp. red wine
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- 1/2 teaspoon parsley
- 1/2 c. minced green pepper
- 10 black olives, sliced
- 1 can artichoke hearts
- 1 tbsp. capers
- 3 tbsp. cocktail sauce
- 1 can minced clams, liquid removed
- 1 pound shrimp
- 1 pound scallops
- Chunks white fish (opt.)
- 8 ounce. ziti, cooked
- Saute/fry garlic and onion in oil and butter till soft.
- Add in tomatoes, red wine, salt, pepper, oregano, basil, and parsley.
- Simmer to make fresh sauce.
- Add in green pepper, olives, artichoke hearts, capers and cocktail sauce.
- Add in seafood and simmer for 8 to 10 min.
- Toss with cooked ziti.
