Grilled Rib Eye With Stilton Butter

  1. On stove or grill, heat a large cast iron skillet to high heat.
  2. In a bowl, combine the butter, cheese, and thyme and season with salt and pepper, to taste.
  3. Cover the bowl and refrigerate for 30 minutes.
  4. Brush the steaks with a bit of oil and season with salt and cracked black pepper.
  5. Char the steaks on both sides on the grill then transfer to cast iron skillet (or char in skillet if cooking on stove).
  6. Continue cooking to medium rare doneness.
  7. Remove from heat, leaving steaks in skillet.
  8. Top with Stiltson butter and sauteed mushrooms.
  9. Let steaks rest for 5 minutes before devouring.
