Potato Frittata

  1. Place oil in warmed frying pan.
  2. Add onion, pepper and mushrooms; saute.
  3. Remove from pan, now add the hash browns, stirring once; brown them.
  4. Beat eggs and milk together add s/p.
  5. Pour over the hash browns.
  6. Cook 4-5 minutes, lifting edges occasionally to allow egg mixture to flow to bottom of skillet.
  7. Add the veggies and the cheese on top.
  8. Lower heat.
  9. Place a lid on top till the cheese melts.
  10. Enjoy.
