Squash & Potatoes

  1. In a large skillet, cook bacon until crisp.
  2. Remove bacon.
  3. Drain, discarding all but 2 tbsp.
  4. drippings.
  5. Add potato.
  6. Cook and stir until lightly browned, about 5 minutes.
  7. Add onion, zucchini and yellow squash.
  8. Cook until tender, about 8 minutes.
  9. Return bacon to skillet.
  10. Sprinkle with dill, salt and pepper.
  11. Cook and stir for about a minute.
