Artichoke Hearts, Cucumber, and Tomato Pasta
- 4 ounces spaghetti whole wheat, or any pasta
- 1/2 cup artichoke hearts marinated, drained, plus 3 tablespoons of marinade from the jar
- 1/2 each cucumbers peeled if desired and sliced into half moon
- 1 each italian plum (roma) tomatoes chopped
- 1/4 cup black olives pitted and sliced
- 4 tablespoons cilantro freshly chopped, including the thin stems
- 1 x red hot pepper sauce or any your favorite hot sauce, to taste
- 1 x salt and black pepper to taste
- Boil the pasta in a pot of boiling and salted water for about 11 minutes or until it reaches desired consistency.
- Drain and set aside.
- In a large bowl, mix together artichoke hearts, marinade, cucumber, tomatoes, and olives.
- Add the pasta, cilantro, and red hot pepper sauce into the bowl, and stir with a wooden until well combined.
- Season with salt, pepper and more red hot sauce to taste.
