Beef Korma

  1. Salt and pepper beef cubes.
  2. Sear beef in peanut oil in large skillet.
  3. Remove beef, set aside.
  4. In same skillet - add onions, garlic and butter.
  5. Saute for about 5 minutes.
  6. Add tomatoes, undrained.
  7. Add coconut milk.
  8. Add 1/2 cup warm water to empty coconut milk can, mixing and scraping any milk left over at bottom and on sides - add to skillet.
  9. Add remaining ingredients and beef.
  10. Over medium-high heat bring everything to a boil, stirring often.
  11. Cover, reduce heat to low and simmer for 1 1/2 - 2 hours, stirring occasionally, until beef is tender.
  12. I serve this with jasmine rice.
  13. This is also good over diced potatoes or chick peas.
