Tomato, Sausage Polenta Recipe
- 1 med. onion, minced
- 1 clove garlic, crushed
- 1/2 pound pork sausage
- 1 can (16 ounce.) tomatoes
- 1 can (8 ounce.) tomato sauce
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- 1/2 c. flour
- 1/2 c. cornmeal
- 1/2 c. Parmesan cheese
- 2 tbsp. sugar
- 2 teaspoon baking pwdr
- 1/4 teaspoon salt
- 1 med. egg
- 1/2 c. lowfat milk
- 2 tbsp. vegetable oil
- 1 c. shredded cheddar cheese
- Brown onion, garlic, sausage till sausage shows no pink.
- Add in tomatoes, tomato sauce, oregano and salt.
- Simmer, uncovered, for 5 min.
- Set aside.
- In a bowl stir together Parmesan cheese, flour, cornmeal, sugar, baking pwdr and salt.
- Mix together egg, lowfat milk and oil.
- Stir into dry ingredients.
- Pour in 9 x 13 inch pan.
- Carefully pour tomato mix over batter.
- Top with shredded cheese.
- Bake at 400 degrees for 20 to 25 min.
- Serves 6.
