Tomato, Sausage Polenta Recipe

  1. Brown onion, garlic, sausage till sausage shows no pink.
  2. Add in tomatoes, tomato sauce, oregano and salt.
  3. Simmer, uncovered, for 5 min.
  4. Set aside.
  5. In a bowl stir together Parmesan cheese, flour, cornmeal, sugar, baking pwdr and salt.
  6. Mix together egg, lowfat milk and oil.
  7. Stir into dry ingredients.
  8. Pour in 9 x 13 inch pan.
  9. Carefully pour tomato mix over batter.
  10. Top with shredded cheese.
  11. Bake at 400 degrees for 20 to 25 min.
  12. Serves 6.
