STOVE TOP Mexican Cornbread
- 1 pkg. (120 g) Stove Top Cornbread Stuffing Mix
- 2 eggs, lightly beaten
- 1 cup shredded Cracker Barrel Old Cheddar Cheese , divided
- 1 medium tomato, seeded, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 3 Tbsp. green chiles, drained, finely chopped
- 1/4 cup hot water
- Preheat oven to 375F.
- Place stuffing mix in large bowl.
- Add eggs, 1/2 cup of the cheese, the tomatoes, chilies and water; mix well.
- Spoon into greased 9x5-inch loaf pan; smooth top with back of spoon.
- Sprinkle with remaining 1/2 cup cheese.
- Bake 20 to 25 min.
- or until heated through.
- Let stand 5 min.
- before cutting into 6 slices to serve.
