Almond Chicken and Rice
- 1 lb boneless skinless chicken breast (cut up into bite sized pcs if desired)
- 14 cup kraft Italian dressing, divided
- 1 14 cups fat-free chicken broth
- 12 teaspoon garlic powder
- 2 cups broccoli florets
- 1 cup instant rice, uncooked
- 14 cup sliced almonds, toasted, divided
- Cook chicken in 2 T dressing in large nonstick skillet on medium heat, 4 minutes on each side or until evenly browned.
- Stir in broth, garlic, and remaining dressing; bring to boil.
- Cover and simmer 5 minutes or until chicken is done.
- Remove chicken and keep warm.
- Add broccoli to skillet; cook, uncovered, 3 minutes.
- Stir in rice and 3 T nuts.
- Remove from heat, cover and let stand 7 minutes.
- Serve chicken over the rice mixture; top with remaining nuts.
