Potato Cups Ala Turkey Meatballs
- 3 cups mashed potatoes
- 1 egg
- 3 green onions, finely chopped
- 13 cup breadcrumbs
- 14 teaspoon cumin, ground
- 12 teaspoon salt
- 1 garlic clove, minced
- 18 teaspoon black pepper
- 12 cup cilantro, finely chopped
- 1 14 lbs ground turkey
- 2 cups turkey gravy
- Preheat oven to 400 degrees Fahrenheit.
- Spray jelly roll pan (with sides) with cooking spray.
- Place eight mounds of potato onto pan.
- Combine egg, onion, bread crumbs, cumin, salt, garlic, pepper, and cilantro; mix in ground turkey, shape into eight meatballs-a bit more than 1/3 cup of meat for each.
- Press one meatball halfway into each potato "cup".
- Bake for 40 minutes, or until meatballs reach 165 F degrees.
- Warm gravy and spoon over meatballs.
