Crosby's Old-Time Christmas Cake
- 1 12 lbs butter
- 1 12 lbs sugar
- 10 eggs
- 34 cup molasses
- 12 cup milk
- 34 cup sherry wine
- 14 cup rum
- 1 tablespoon lemon flavoring
- 1 tablespoon almond flavoring
- 6 cups flour
- 3 lbs raisins
- 1 lb currants (seeded)
- 1 lb cherries
- 1 lb citron
- 1 lb figs or 1 lb dates
- 1 lb almonds
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- Cream butter - add sugar gradually and beat thoroughly.
- Add beaten eggs, molasses, milk, sherry, rum and flavoring.
- Dredge fruit and nuts in one cup of flour.
- Sift remaining flour, baking soda, cream of tartar, and spices, and add to mixture with fruit.
- Mix well with a spoon.
- This mixture will make three cakes using 2 round tins (approximately 8x3-inch) and one round tin (approximately 6x3-inch) .
- Line well-greased pans with heavy waxed paper.
- Fill pans 3/4 full and bake 3-4 hours at 300F.
