Apple & Walnut Stuffed Acorn Squash

  1. Cut off and discard small piece from pointed end of squash.
  2. Cut squash crosswise in half; remove and discard seeds.
  3. Place, cut sides down, on microwaveable plate.
  4. Microwave on HIGH 10 to 12 min.
  5. or until squash is very tender.
  6. Meanwhile, melt butter in small skillet on medium heat.
  7. Add onions; cook and stir 4 to 5 min.
  8. or until tender and golden brown.
  9. Stir in apples; cook 1 min.
  10. Add cream cheese; cook 1 min.
  11. or until melted, stirring frequently.
  12. Stir in nuts.
  13. Place squash, cut sides up, on serving platter; fill centers with apple mixture.
  14. Sprinkle with cinnamon.
