Zucchini Muffins
- 34 cup Egg Beaters egg substitute
- 3 teaspoons vanilla extract
- 3 teaspoons ground cinnamon
- 12 teaspoon ground nutmeg
- 3 cups all-purpose flour
- 1 cup applesauce
- 2 cups grated zucchini
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon baking powder
- Mix egg beaters and vanilla, beat until well blended.
- Add Cinnamon, nutmeg, flour, oil, zucchini to egg mixture and beat well.
- Add sugar, baking soda, salt and baking powder, blend well.
- Bake at 350 for 15 to 20 minutes.
- Makes 30 muggins.
