Potato Casserole
- 8 potatoes, cooked and coarsely mashed
- 14 cup unsalted butter
- 2 cups shredded cheddar cheese
- 1 teaspoon salt substitute
- 13 cup chopped chives
- 16 fluid ounces sour cream
- 18 teaspoon pepper
- Melt the butter and cheese in a saucepan.
- Remove from the heat and add the sour cream, chives, salt and pepper.
- Fold into the mashed potatoes and place in a greased casserole dish.
- Cover and bake at 325F for 25 minutes.
- Uncover, sprinkle more grated cheese on top, and return to the oven just until cheese is melted.
