Acapulco Jicama Salad Recipe
- 1/4 c. cilantro, chopped
- 2 Tbsp. lime juice
- 2 Tbsp. white wine vinegar
- 2 Tbsp. oil
- 1/2 tsp kosher salt
- 1/4 tsp pepper
- 3 x oranges
- peeled, and sliced into 1/4" thick circles
- 1 x avocado
- peeled, pitted, and sliced into 1" cubes
- 1 sm jicama
- peeled and sliced into 1/2" cubes
- 18 x red-leaf lettuce leaves
- wash, dry, and tear into pcs
- Whisk together cilantro, lime juice, vinegar, oil, salt, and pepper.Marinate orange slices, avocado, and jicama in lime-cilantro vinaigrette for 30 min.
- Arrange lettuce on chilled salad plates.
- Remove orange, avocado, and jicama from marinade and place on lettuce.
