Fresh Tomato and Shrimp Pasta
- 2 Tablespoons Olive Oil
- 1/2 whole Onion, Chopped (red Or Sweet)
- 2 cloves Garlic, Minced
- 2 teaspoons Chili Pepper Flakes
- 5 whole Tomatoes (slicing), Diced
- 1/2 cups White Wine
- 1 pound Raw Shrimp, Peeled And Deveined
- 1 box Angel Hair Pasta
- Fresh Mozzarella
- Basil, Julienned

- Saute onion in olive oil on medium heat, until translucent.
- (Start pasta water boiling too, according to package directions).
- 2.
- Add minced garlic, *chili pepper flakes, and simmer a few more minutes.
- 3.
- Stir in diced tomatoes (can substitute cans) and white wine.
- 4.
- Stir in shrimp (still on medium heat) and then start pasta.
- Angel hair should take a little over 4 minutes, about the same time as the shrimp.
- Simmer, stirring, until shrimp are pink.
- 5.
- Serve over pasta and garnish with julienned basil leaves and fresh mozzarella.
- *Add less if too spicy.
- Freshly chopped cayenne peppers also work well.
- I also adjust proportions so that there are enough tomatoes, depending on size.
- Adjust quantities for total portions, too.
