Roasted Vegetable & Rice Wraps

  1. Bring water to a boil in 2-quart saucepan; add rice.
  2. Cover, cook over low heat 5 minutes.
  3. Add vegetables and garlic salt.
  4. Continue cooking, covered, 4-6 minutes or until water is absorbed.
  5. Stir in cheese.
  6. Place 3/4 cup rice mixture onto center bottom half of warmed tortilla.
  7. Fold up bottom half of tortilla over rice mixture; fold sides of tortilla towards center.
  8. Roll up tightly into wrap.
  9. Cut in half.
  10. Serve immediately.
