Fresh Lime Ice Cream
- 1/2 cup fresh lime juice
- 1 tbsp. fresh lime juice
- 1 tbsp. grated lime zest
- 1 tsp. grated lime zest
- 2 cups sugar, preferably superfine (use food processor on granulated)
- 1 dash of salt
- 2 cups heavy cream (whipping)
- 2 cups milk
- Combine lime juice, lime zest, sugar and salt.
- Mix well.
- Gradually stir in the cream and then the milk.
- Stir until the sugar dissolves.
- Cover and refrigerate for at least four hours or overnight.
- Stir mixture and pour into ice cream maker.
