Coconut Shrimp Soup

  1. Fry onions, peppers and mushrooms in oil
  2. Add coconut milk and carrots
  3. Add water with about a tablespoon of cornstarch
  4. Stir occasionally, adding the shrimps when the soup starts to simmer
  5. Add assorted Spices and ginger.
  6. Personally I used lots of rosemary, Chilli powder and curry powder.
  7. I also added a dash of nutmeg and cinnamon
  8. Add noodles to thicken the soup.
  9. Since coconut soup cooks very quickly take the soup down when you feel it's ready.
  10. I let it boil for about 15 minutes.
  11. Add lemon juice and chopped parsley to garnish
  12. Enjoy!
