Curry Lentils and Kale

  1. Add the lentils and 6 cups of water, and salt into a medium saucepan, and bring to a boil, allow to boil for 5 minutes.
  2. Reduce the heat to simmer until the lentils are tender but not mush, about 20 minutes.
  3. Stir in the kale during the last 5 minutes of simmering.
  4. Drain the lentil-kale mixture, reserving 1 cup of cooking water.
  5. Meanwhile add the olive oil in a large skillet over medium heat.
  6. Add coriander, cumin, mustard, cayenne pepper and curry powder, and cook for 1 minutes.
  7. Stir in the garlic and ginger, cook until fragrant, 2 to 3 minutes.
  8. Pour the lentil-kale mixture and reserved cooking water into the skillet.
  9. Cook under medium-low heat for 3 to 5 minutes.
  10. Season with salt to taste.
  11. Serve with cilantro, raita or yogurt, and naan bread if desired.
