Shredded Potato Pancakes Recipe
- 4 lg. all-purpose potatoes, pared
- 2 Large eggs
- 1 sm. onion, grated
- 1/3 c. all-purpose flour
- 1 teaspoon salt
- Vegetable oil for frying
- Shred potatoes onto a towel; squeeze dry.
- Place in large bowl; stir in Large eggs, onion, flour and salt.
- In large skillet, heat oil over medium heat.
- Drop potato mix by scant 1/2 cupfuls into skillet; flatten each to about 4 inch round.
- Cook till golden, about 4 min.
- Turn, cook on other side till golden brown, about 4 min.
