Shredded Potato Pancakes Recipe

  1. Shred potatoes onto a towel; squeeze dry.
  2. Place in large bowl; stir in Large eggs, onion, flour and salt.
  3. In large skillet, heat oil over medium heat.
  4. Drop potato mix by scant 1/2 cupfuls into skillet; flatten each to about 4 inch round.
  5. Cook till golden, about 4 min.
  6. Turn, cook on other side till golden brown, about 4 min.
