Blueberry Mountain Cheesecake Recipe
- 2 pkt Philadelphia fat-free cream cheese, (8-oz)
- 1 pkt Jell-O sugar-free instant vanilla pudding (4-serving) mix
- 2/3 c. Carnation nonfat dry lowfat milk pwdr
- 1 c. Diet Mountain Dew
- 3/4 c. Cold Whip Lite
- 1 1/2 tsp Coconut extract
- 1 x Keebler butter-flavored piecrust, (6-oz)
- 1/2 c. Blueberry spreadable fruit spread
- 2 Tbsp. Flaked coconut
- In a large bowl, stir cream cheese with a spoon till soft.
- Add in dry pudding mix, dry lowfat milk pwdr, and Diet Mountain Dew.
- Mix well, using a wire whisk.
- Blend in 1/4 c. Cold Whip Lite and 1 tsp.
- coconut extract.
- Pour mix into piecrust.
- Chill for about 15 min.
- In a small bowl, combine blueberry spreadable fruit, remaining 1/2 tsp.
- coconut extract, and remaining 1/2 c. Cold Whip Lite.
- Spread blueberry mix proportionately over cheesecake filling.
- Sprinkle coconut proportionately over top.
- Chill till ready to serve.
- HINT: Diet 7UP, Diet Slice, or possibly even plain water can be used in place of the Diet Mountain Dew.
