Smokin Strata

  1. Preheat oven to 375F.
  2. Coat a 9 x 13-inch casserole dish with cooking spray.
  3. In a medium saute pan set over medium-high heat, melt the butter.
  4. Add the bell peppers and leeks and saute until soft, about 8 minutes.
  5. Set aside.
  6. Spread half of the bread cubes in the prepared casserole dish.
  7. Top with three-fourths of the cheese and three-fourths of the red pepper mixture.
  8. Repeat the layers.
  9. In a medium bowl, whisk together the milk, half-and-half, eggs, mustard, salt, and pepper.
  10. Pour over the strata layers.
  11. Bake for 1 hour, or until the eggs are firm and set in the center and the top of the casserole is golden brown.
  12. Vegetarian friendly!
