Tomato Mozzarella Salad with Vinaigrette Dressing
- 1 lb fresh mozzarella cheese
- 1 lb ripe tomatoes
- 1 Fresh whole large basil leaves
- 1 Salt and ground pepper
- 1 tbsp balsamic or wine vinegar *
- 1/4 tsp dijon mustard*
- 1 pinch salt, pepper and sugar*
- 1/4 cup evoo*
- Prepare vinaigrette dressing * In a small bowl whisk together vinegar*, mustard* and sugar* salt* pepper*
- Add oil* in thin stream, whisking until mixture is smooth.
- Refrigerated until ready to use.
- (Whisk again before serving.)
- Cut mozzarella into 1/4" inch slices.
- Cut tomatoes into 1/4" inch slices.
- Arrange mozzarella slices, tomatoes slices and basil leaves alternately on plate.
- Sprinkle salt and pepper.
- Ready to serve; Whisk again your dressing.
- Drizzle with dressing.
