Southwestern Tortilla Wedges
- 1/2 c. fresh tomato salsa or prepared salsa
- 1/2 c. sour cream or plain yogurt
- 1/4 c. bell pepper, chopped
- 1/2 c. cooked chicken, finely chopped
- 8 tortillas (8-inch)
- 1/2 c. guacamole
- 1/2 c. refried beans
- 1 c. shredded Cheddar cheese or Monterey Jack cheese
- Heat oven to 350u0b0.
- Mix tomato salsa and sour cream.
- Reserve half of salsa mix.
- Mix the remaining half with half the bell pepper and the chicken.
- Place 2 tortillas on ungreased cookie sheet; spread with chicken mixture.
- Spread 2 more tortillas with refried beans and guacamole.
- Top stacks with remaining salsa, bell pepper and cheese.
- Bake for about 15 minutes, or until cheese is melted and filling is hot.
- Cut each stack into 8 wedges.
