Blender Carrot Pecan Cake Recipe
- 1 c. minced pecans
- 1 1/4 c. salad oil
- 4 x Large eggs
- 2 c. sugar
- 2 tsp salt
- 3 c. sliced carrots
- 2 c. flour, sifted
- 1 tsp baking soda
- 2 tsp baking pwdr
- Chop pecans in blender to a fine texture, set aside.
- Place salad oil, Large eggs, sugar, salt in blender container and blend for 5 seconds.
- Add in carrots gradually and blend till just grated.
- In a large mixing bowl, sift togeter flour, baking soda and baking pwdr.
- Pour the contents of the blender over the dry ingredients.
- Mix well with an electric mixer.
- Stir in the finely minced pecans pour into greased tube pan.
- Bake at 325 degrees about 1 hour and 10 min.
