The Ultimate Spring Egg Sandwich
- 2 bunches ramps, leaves only
- 1 - 2 cups Parmigiano Reggiano cheese, grated
- 1 cup pine nuts, lightly toasted
- 1 cup basil leaves
- 1 cup olive oil
- 1/2 lemon
- 1 pretzel roll, halved, toasted if desired
- 1/4 cup vegetable oil
- 1/2 cup button mushrooms, sliced
- salt
- 1/2 bunch ramps, leaves only
- 3 strips bacon, cooked crisp
- 1 egg
- In a blender or food processor, mix the ramp leaves, cheese, pine nuts, basil and olive oil until you achieve a coarse paste.
- Add the lemon juice, mix and taste.
- Adjust the seasoning as necessary with cheese for more salt, and set aside in the fridge in an airtight container.
