Crumb-Topped Salmon with Cucumber Salad
- 4 skinless salmon fillets (1 lb.) Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/4 cup KRAFT Real Mayo Mayonnaise
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 1/8 tsp. ground red pepper (cayenne)
- 10 round buttery crackers, crushed (about 1/2 cup)
- 1 cup thinly sliced cucumbers
- 1/4 cup thinly sliced red onions
- 2 Tbsp. KRAFT Zesty Italian Dressing
- 1/2 tsp. dill weed
- Heat oven to 400F.
- Place fish in 13x9-inch baking dish; drizzle with lemon juice.
- Mix mayo, cheese and red pepper; spread over fish.
- Sprinkle with cracker crumbs.
- Bake 12 to 14 min.
- or until fish flakes easily with fork.
- Meanwhile, combine remaining ingredients.
- Serve fish with vegetable mixture.
