Chicken Alfredo Pizza
- 14 cup butter
- 1 cup heavy cream
- 23 cup freshly grated parmesan cheese
- salt
- pepper
- pizza dough, for 12-inch crust
- 10 large fresh spinach leaves, rinsed and dried
- 6 green onions, sliced diagonally, including tops
- 2 boneless skinless chicken breast halves, cooked and shredded
- 12 lb bacon, cut into 1/2-inch pieces, cooked until crisp
- 1 cup grated mozzarella cheese
- 1 cup grated swiss cheese
- The sauce: melt butter in a large saucepan or skillet; add in cream and bring to a boil.
- Simmer for 5 minutes, stirring constantly; add in parmesan cheese and salt and pepper to taste; turn off heat under pan.
- The pizza: roll out pizza dough in pizza pan (can use a round cardboard covered with plastic wrap) to form crust; spread alfredo sauce evenly over pizza crust.
- Arrange spinach leaves over sauce; add green onions, shredded chicken, and bacon.
- Sprinkle cheeses over the top.
- Freeze, covering pizza and pan (or pizza and cardboard) with plastic wrap followed by heavy-duty foil.
- To serve: place frozen pizza on pizza stone or baking pan and thaw; preheat oven to 450; bake 15 minutes or until bubbly.
