Lilhpster's VEGAN Mac & Cheese
- 1 1/2 cup pasta (can be macaroni, rotini, or shell pasta)
- 1/2 cup Daiya dairy free cheddar style shredded "cheese"
- 1/2 cup Daiya dairy free mozzarella style shredded "cheese"
- 1/3 cup unsweetened soy or almond milk
- 2 tbsp Earth Balance non dairy buttery spread
- 1 dash sea salt
- Boil the pasta on high heat until al dente.
- Remove from the stove and drain the excess water.
- Turn the burner down to low heat.
- Place back on the stove and add the "butter" and the "milk" and the salt
- Stir in both types of "cheese".
- Stir CONTINUOUSLY until all the cheese and butter melt to create a thick cheese sauce.
- Add more milk or cheese to create your preferred consistency.
- Plate it up and enjoy!
