Mom T's Salmon Patties
- olive oil
- 2 (6 ounce) cans boneless skinless pink salmon
- 2 eggs, lightly beaten
- 1 tablespoon onion, minced
- 1 teaspoon parsley, chopped
- Heat olive oil in a skillet.
- Drain salmon and flake it into a bowl.
- Add eggs, onion and parsely.
- Mix well.
- Shape into 4 patties and fry in pan until lightly browned on both sides and cooked through, about 8-10 minutes.
- Note- Sometimes I don't feel like making the patties and just throw it all in the skillet and make scrambled salmon.
