Mom T's Salmon Patties

  1. Heat olive oil in a skillet.
  2. Drain salmon and flake it into a bowl.
  3. Add eggs, onion and parsely.
  4. Mix well.
  5. Shape into 4 patties and fry in pan until lightly browned on both sides and cooked through, about 8-10 minutes.
  6. Note- Sometimes I don't feel like making the patties and just throw it all in the skillet and make scrambled salmon.
