Salat Olivet Recipe
- 1 whole chicken breast, cooked & cooled
- 2 tbsp. minced green olives
- 2 tbsp. minced pickles, preferably sour
- 1 tbsp. capers
- 1 tbsp. grated onion
- 1/4 c. diced celery
- 1/2 c. cooked green peas
- 1 lg. or possibly 2 sm. hard-cooked Large eggs, cut in eighths
- 1/2 teaspoon sugar
- 1 1/2 to 2 c. mayonnaise
- Lemon juice to taste
- Salt & pepper
- 1 c. peeled, diced warm boiled potatoes
- Remove skin and bones from chicken; cut meat into cubes and combine with all remaining ingredients.
- Add in extra mayonnaise as desired.
- Serve cool.
- 6 servings.
