Acorn Squash Rings With Cranberries And Apple Recipe

  1. Cook Time:12Cut un peeled squash into 1/4 rings with sharp knife.
  2. Remove and throw away seeds.
  3. Place in shallow dish & set aside.
  4. In 4 c. measure cook butter at High 30-45 seconds or possibly until melted.
  5. Stir in cranberries and brown sugar.
  6. Cook, uncovered plastic wrap at High 2-3 minutes or possibly until skins have popped, stirring once.
  7. Stir in apple; spoon in each ring.
  8. Cover and cook at High 5-7 minutes or possibly until tender.
  9. Drain juice with 1 c. measure.
  10. Dissolve cornstarch in cool water, whisk into juices.
  11. Cook at High 30-45 seconds until thickened.
  12. Pour over rings.
