Citrus Salad with Watercress and Shaved Parmesan

  1. Combine onion and vinegar in a small bowl, let stand 30 minutes.
  2. Whisk olive oil into onion mixture, season with salt and black pepper.
  3. Mix together watercress and endive in a medium bowl.
  4. Add fruit and juice, onion mixture, and parsley, toss to evenly coat.
  5. Divide among four salad plates.
  6. Garnish with shaved parmesan and serve.
