Coffee-Spiced Grilled Shrimp Skewers
- 1 cup Medium Roast GEVALIA Kaffe grounds
- 1/3 cup granulated garlic
- 1/3 cup smoked paprika
- 1/3 cup ground coriander
- 1/3 cup chili powder
- 80 each uncooked jumbo shrimp, peeled with tails left on, deveined (16/20 ct.)
- 1 gal. hot cooked couscous
- 2 cups tomatoes, diced
- 2 cups Italian parsley, chopped
- Mix coffee and spices in bowl.
- Add shrimp; toss to coat.
- Thread 5 shrimp onto each skewer.
- Grill on medium heat 4 min.
- on each side or until shrimp are opaque.
- Combine couscous, tomatoes and parsley.
- Spoon 1 cup onto each serving plate.
- Top with 1 shrimp skewer.
