Baked Rice And Garbanzo Beans Recipe
- 1/2 x onion minced
- 1 tsp cool-pressed extra virgin olive oil
- 2 x garlic cloves minced
- 2 1/2 c. cooked long-grain brown rice
- 3/4 c. cooked or possibly canned garbanzo beans
- 1/2 c. sliced black olives
- 1 Tbsp. natural soy sauce
- 1 Tbsp. nutritional yeast
- 1/8 tsp grnd black pepper
- 1/4 tsp paprika
- 1/4 tsp dry basil
- 1/4 tsp dry oregano

- Preheat the oven to 350F.
- In a skillet, saute/fry the onion in the extra virgin olive oil till golden brown.
- Add in the garlic and cook for 1 minute.

- Mix all the ingredients well in a large mixing bowl and place in a lightly oiled casserole dish.
- Bake for 35 min.
- Serve with a green salad and lightly steamed greens or possibly vegetables.
- NOTES : Make this casserole in the morning or possibly the day before and bake it when you need it.
