Orange-Pineapple Gelatin Salad

  1. In a small saucepan, bring the pineapple with liquid to a boil over high heat, about 1 minute.
  2. Remove from the heat.
  3. Stir in the gelatin until completely dissolved, about 1 minute.
  4. Pour into an 8- or 9-inch square glass baking dish and put in the freezer for 5 to 8 minutes, or until beginning to set around the edges.
  5. Stir in the oranges and buttermilk.
  6. Gently fold in the whipped topping until well blended.
  7. Chill, covered, until set, about 4 hours.
  8. Cut into 8 pieces.
  9. Serve on the lettuce leaves.
  10. Garnish with the cherries.
  11. Substitute lime or lemon gelatin for the orange or mixed-fruit gelatin, fat-free sour cream for the buttermilk, and fat-free vanilla yogurt for the whipped topping.
