Orange-Pineapple Gelatin Salad
- 1 8-ounce can crushed pineapple in its own juice, undrained
- 1 0.3-ounce box (4-serving size) sugar-free orange or mixed-fruit gelatin
- 1 11-ounce can mandarin oranges in water or juice, well drained
- 1 cup low-fat buttermilk
- 4 ounces frozen fat-free whipped topping, thawed in the refrigerator (about 1 1/2 cups)
- 8 lettuce leaves (optional)
- 2 cups Bing cherries or seedless red grapes (about 12 ounces of either) (optional)
- In a small saucepan, bring the pineapple with liquid to a boil over high heat, about 1 minute.
- Remove from the heat.
- Stir in the gelatin until completely dissolved, about 1 minute.
- Pour into an 8- or 9-inch square glass baking dish and put in the freezer for 5 to 8 minutes, or until beginning to set around the edges.
- Stir in the oranges and buttermilk.
- Gently fold in the whipped topping until well blended.
- Chill, covered, until set, about 4 hours.
- Cut into 8 pieces.
- Serve on the lettuce leaves.
- Garnish with the cherries.
- Substitute lime or lemon gelatin for the orange or mixed-fruit gelatin, fat-free sour cream for the buttermilk, and fat-free vanilla yogurt for the whipped topping.
