Vegetable Oven Omelet
- 3 eggs
- 1 cup soymilk (or milk of your choice)
- 1/2 cup baking mix (gluten-free/regular)
- 1/2 tsp salt
- 2 cup mushrooms, sliced
- 2 cup shredded cheddar cheese
- Heat oven to 350F.
- Place mushrooms in bottom of greased baking dish.
- In a bowl, mix eggs, milk, baking mix, & salt.
- Pour over mushrooms.
- Top with cheese.
- Bake for 45-55 minutes, or until egg mixture is set.
