Red Cabbage With Strawberry Served at 2013 Obama Inaugural Lunch

  1. Place the cabbage, vinegar, sugar and water in a large heavy-bottomed pot.
  2. Bring liquid to a boil.
  3. Reduce heat and simmer for 2-3 hours or until the liquid has reduced to a syrup-like consistency.
  4. Stir occasionally during the 2-3 hours.
  5. Add 1/4 cup of the strawberry preserves to the cabbage and stir until fully incorporated.
  6. Taste and decide if you want to add the remaining 1/4 cup of the preserves.
  7. If the taste is too sweet, adjust sweetness with additional salt.
