Weezys quick n healthy breakfast!
- 2 Portobello mushrooms
- 1 tomato, diced
- 1 hass avocado, chopped
- 1/2 red onion, diced
- 2 eggs
- 1 tbsp shredded cheese
- 1 tsp olive oil
- On a greased baking tray, place portobello mushrooms, stalk facing up.
- In a bowl combine tomato, avocado, onion and oil.
- Add preferred seasoning if desired
- Top mushrooms with mixture
- Cook in oven at approx 200c for 10 min sprinkle cheese ontop and cook a further 2min.
- Remove mushrooms from oven and top each with a poached egg
