Asian Sweet Potato Muffins
- 120 grams Asian sweet potato (net weight)
- 90 grams Cake flour
- 1 tsp Baking powder
- 60 grams Butter
- 40 grams Sugar
- 1 Egg
- 4 tbsp Milk
- 1 Black toasted sesame seeds
- Shift together the cake flour and baking powder.
- Add the butter and sugar in a bowl.
- Also add the boiled Asian sweet potatoes and mash them.
- Add the egg and milk and mix.
- Then combine the dry ingredients.
- Place the cupcake liner in a muffin tin.
- Pour in the batter and sprinkle with the sesame seeds.
- Bake in the 180C oven for 20 minutes.
- Cool on a rack.
