Quick Mix Waffles
- 2 large eggs separated
- 113 cup milk
- 2 tablespoons vegetable oil
- 2 cups quick bread mix
- Beat egg yolks in a medium mixing bowl; add milk and oil.
- Add Quick Bread Mix, stirring until mixture is smooth.
- Beat egg whites (at room temperature) until stiff peaks form, and gently fold back into the batter.
- Pour about 13 cup batter into a hot, lightly oiled waffle iron.
- Bake about 5 minutes or until steaming stops.
- Repeat procedure until all batter is used.
- Serve warm with powdered sugar and fresh berries if desired.
