Giardiniera
- 2 green bell peppers
- 2 yellow bell peppers
- 3 red peppers
- 2 yellow onion
- 3 celery stalk:ribs
- 2 carrots
- 1 cup kosher salt
- 6 clove garlic
- 3 tbsp dried oregao
- 1 tbsp crushed red chili flake
- 1 tsp ground black pepper
- 4 cup green olives, sliced
- 5 cup red wine vinegar
- 5 cup pomace oil
- Dissolve salt in cold water and pour over vegetables
- rinse after 4-6 hours
- assemble pickling set
- Cover with pickling set
