low calorie cauliflower mac and cheese

  1. Preheat oven to 350F
  2. Bring large pot of water to boil and season with salt
  3. Add cauliflower and cook until tender
  4. Drain, reserving 1 Cup of liquid and set aside
  5. In same pot melt butter on medium heat
  6. Whisk in flour, garlic, milk , cooking liquid.
  7. Whisk the entire time until thickened
  8. Remove from heat and add cheese , yeast , cayenne pepper, and egg.
  9. Stir until melted
  10. Add cauliflower
  11. Spray a casserole dish with nonstick cooking spray and pour in mixture
  12. Top with bread crumbs and onion powder and pepper
  13. Bake for 30 minutes
  14. *tip* u can spray breadcrumbs with cooking spray to ensure it becomes crisp and brown
