Gingerbread Men

  1. In a medium bowl, cream together the dry butterscotch pudding mix, butter, and brown sugar until smooth.
  2. In a separate bowl, stir in the egg.
  3. Combine the flour, baking soda, ginger, and cinnamon then stir into the pudding mixture until dough forms.
  4. Cover bowl and chill dough until firm, about 1 hour.
  5. Preheat the oven to 175C.
  6. Grease a baking sheet.
  7. On a floured board, roll dough out to around a 1/4 inch thickness and cut into man shapes using a cookie cutter (can also use Christmas trees, Santas, circles etc).
  8. Place cookies 2 inches apart on the prepared baking sheets.
  9. Bake for 10 to 12 minutes in the preheated oven, until cookies are golden at the edges.
  10. Cool on wire racks.
  11. Pipe royal icing to detail the men once cookies are cool.
  12. Can be stored in a container in the fridge for a week.
