Gingerbread Men
- 12 cup butter
- 12 cup brown sugar, firmly packed
- 1 egg
- 100 g butterscotch pudding mix
- 1 12 cups all-purpose flour
- 12 teaspoon baking soda
- 1 12 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- In a medium bowl, cream together the dry butterscotch pudding mix, butter, and brown sugar until smooth.
- In a separate bowl, stir in the egg.
- Combine the flour, baking soda, ginger, and cinnamon then stir into the pudding mixture until dough forms.
- Cover bowl and chill dough until firm, about 1 hour.
- Preheat the oven to 175C.
- Grease a baking sheet.
- On a floured board, roll dough out to around a 1/4 inch thickness and cut into man shapes using a cookie cutter (can also use Christmas trees, Santas, circles etc).
- Place cookies 2 inches apart on the prepared baking sheets.
- Bake for 10 to 12 minutes in the preheated oven, until cookies are golden at the edges.
- Cool on wire racks.
- Pipe royal icing to detail the men once cookies are cool.
- Can be stored in a container in the fridge for a week.
