Tilapia with Mango Salsa
- 1/2 cup long-grain brown rice, uncooked
- 1 cup chopped mangos Whole Foods 2 ea For $4.00 thru 02/09
- 1/4 cup finely chopped cucumbers
- 2 Tbsp. finely chopped red onions King Sooper's 1 lb For $0.99 thru 02/09
- 2 Tbsp. Kraft Calorie-Wise Balsamic Vinaigrette Dressing, divided
- 2 tsp. canola oil
- 2 tilapia fillets (1/2 lb./225 g)
- Cook rice as directed on package.
- Meanwhile, combine mangos, cucumbers, onions and 1 Tbsp.
- dressing; set aside.
- Heat oil and remaining dressing in large nonstick skillet on medium-high heat.
- Add fish; cook 3 min.
- on each side or until fish is browned on both sides and flakes easily with fork.
- Serve fish with rice and mango salsa.
